The turnkey stay
Three days tuned to the rhythm of the peninsula: waking among hills of vines and umbrella pines, a barefoot day on the sand of Pampelonne, where SAINT — the Bagatelle Group's new address, open since 26 June 2026 — runs from sunrise pilates to a Mediterranean lunch and a sunset DJ set. Between two beaches, Arnaud Denckele's three-star table in Saint-Tropez and Éric Canino's kitchen garden on the heights of Ramatuelle give the stay its gastronomic backbone. The rest plays out in the shade of a Gassin cru classé and on the jetty of a 1955 beach institution: here, luxury is a question of slowness, not of display.
Where to stay
- Airelles Saint-Tropez, Château de la Messardière — A 19th-century palace hotel set in a 13-hectare park of umbrella pines, overlooking the bay of Pampelonne: 86 rooms and suites, spa, pools and a constellation of tables (Matsuhisa by Nobu, Palladio, Les Tables du Jardin). The decisive asset for this stay: its private beach, Jardin Tropezina, on the sand of Pampelonne, minutes from SAINT.
- Hôtel Byblos Saint-Tropez — The Saint-Tropez icon since 1967, a Provençal village of colourful façades steps from the place des Lices: 86 rooms and suites (several redesigned by Laura Gonzalez in 2025-2026), Byblos Spa by Sisley, Il Giardino and the legendary Caves du Roy for the after. Its Byblos Beach in Ramatuelle puts guests on the same sand as SAINT.
Where to dine
- La Vague d'Or, Cheval Blanc St-Tropez (Arnaud Donckele) — Three stars in the Guide MICHELIN 2026 and 19/20 at Gault&Millau: a cuisine of sauces, jus and broths built around the fish of the Mediterranean, served facing the bay of the Bouillabaisse. The peninsula's benchmark dinner — evening service only, booking essential several weeks ahead in high season.
- La Voile, La Réserve Ramatuelle (Éric Canino) — Two MICHELIN stars in 2026, seven minutes from Pampelonne on the ridges of Ramatuelle: vegetables and herbs from the house kitchen garden, olive oil, rock fish, brief cooking and barely any fat — the Mediterranean at its most luminous. A due-south terrace above one of the finest bays on the coast, ideal for dinner after a day at SAINT.
What to experience
- Château Minuty, visite du domaine et dégustation (Gassin) — A Provence cru classé and family estate since the 1930s, ten minutes from Pampelonne: guided visit of the cellar and the vines, then a tasting in the caveau (Prestige, 281, Gabriel, Or cuvées). The late-morning appointment before heading back down to the beach — 2491 route de la Berle, quartier Minuty, Gassin; book online.
- Le Club 55, déjeuner pieds dans le sable, plage de Pampelonne — The Pampelonne institution since 1955, a few hundred metres from SAINT: crudités served in a basket, grilled fish, tables under the tamarisks, boutique and cabanas, with mooring at the jetty for those arriving by boat. Open 27 March to 1 November 2026, lunch only — 43 boulevard Patch, Ramatuelle.
